Sunday, the day of rest. Well that's what I was taught at school (and in church) when I was a kid. Whilst it's important to a lot of us, it's not the day of rest in all religions so let's not dwell on this point other than to say that it is a special day.

We all work long and hard during the week and it's the weekend when most of us are lucky enough to take a break, spend time with the family and indulge in our passions and interests. For me, one of those passions is cooking and even though I do write recipes as part of my day job, cooking is still an important part of our weekend family ritual. There's nothing better than everyone sitting down to a meal together, we can discuss the weeks event's, what's coming up next week and most importantly, enjoy being there in the present with each others company.

Trying to do something special and different all the time can become a strain so sometimes simple is best. Think about the secret of good Italian food; fresh basic ingredients, full of flavor and simply cooked. So why shouldn't we do the same?

I love chicken on a Sunday, and when the family is around the table, it's got to be a whole chicken carved right there. For some reason, chicken pieces just don't have that same effect do they? So how do you barbecue a whole chicken simply?

I have three steps for a . The first thing is to let the chicken do the talking, get one that's got some texture and flavor. Free range, corn-fed and organic if you can stretch to it. A free range chicken has so much more flavor and texture because while alive it's had the opportunity to move around and exercise its muscles and this really does make for a different meat.

Secondly, spatchcock it. This just means cutting down the backbone and opening the chicken out so that it is flat. Technically you should remove the keel bone ( commonly and mistakenly referred to as the breast bone) but it's not essential. Barbecue grilling your chicken flat like this means that it cooks in a shorter period of time (usually about 50 minutes) and it's an easy grill, just turn over at the halfway stage - now what could be more simple than that? In addition when you spatchcock the chicken the backbone is cut out, this is where the any bugs from the intestinal tract might still linger so preparing your chicken in this manner reduces the health risks too.

All you need to do to spatchcock your chicken is to sit it on a board on its neck and cut down either side of the backbone with a sharp knife. Flatten it and if you want to cut either side of the keel bone and "pop" it out.

The final thing for a simple grilled barbecue chicken recipe is the seasoning. Rub on a little olive oil and then season on both sides with salt and pepper. Not only is the most simple seasoning sometimes the best, the salt will draw the moisture out of the fat and give you that tasty crispy skin.

How to carve? When your chicken is cooked, just slap it down on the carving board and quarter it. Now you can't get much more simple than that!

Once the beef is brown, add the pork. Stir gently and allow to cook for 4 to 5 minutes. Pour the beer and stir in the beans. Combine the mixture well with the other ingredients. Then, add the tomatoes. Reduce the heat and simmer for 1 hour and 30 minutes. Remove the mixture from heat and place in a serving bowl. How To Make Ghee - A Simple Healthy Recipe

Ghee is regarded as one of the best food sources in the Ayurvedic diet and it is considered beneficial for everyone in moderation.

The yogis and practitioners of Ayurveda consider it to be a very healthy, balancing and harmonizing food because it lubricates all the muscle tissues of the body.

Making ghee gets rid of impurities (fats and milk solids) and water out of the butter so you are left with healthy clarified butter.

Ghee can be used in most recipes for flavoring and cooking. Here is what you need to make your Ghee.

Ingredients & Materials:

1 pound unsalted butter (organic if available), a large pot or sauce pan, a few sheets of cheesecloth, a strainer, a clean container or one pound glass jar with a lid.

1. Melt the butter in a large pot or sauce pan on low to medium until it comes to a boil. You will start to hear a popping sound. Do not stir.

2. Continue to cook the melted butter over low to medium heat. It should continue to pop and bubble and some foam may appear on top. You can skim off and discard the foam if you like but leaving it won't affect the ghee.

3. Remove from heat when the popping sound and bubbling noise quiets down. Sediment at the bottom of the pot will start to turn golden brown. The ghee will turn to a clear golden or amber color. This usually takes about 20 minutes. A darker color means overdone ghee so it's important not to leave the ghee on the heated stove.

4. Leave the heated ghee to cool for 10 to 20 minutes and then line a strainer with some cheese cloth and strain the ghee into clean containers (sterilized jars work great).

Note: Ghee at room temperature looks yellow and has semi-solid texture. Ghee does not need to be refrigerated and if it is properly made and not exposed to contaminates, it will keep for over a year, even outside the fridge - it melts quickly when exposed to heat. Remember to always use a clean spoon to scoop out ghee for use.

How To make flavored Ghee - Infused With Herbs

It is very easy to make flavored ghee using the recipe above and infusing some Ayurvedic herbs or spices such as cloves, cardamom or mint

To infuse the herbs, add them to the butter at the start or at any point in the process that results in them being dissolved into the ghee. I have experimented with adding herbs at different stages and I found the infusion strength to be best when added right after the butter has melted (just beginning to bubble).

I would recommend a quarter teaspoon of herb for each pound of butter. When making clove or cardamom ghee, I use 6 to 8 cloves or cardamom pods to the butter and it tastes great.

Low Calorie Banana Bread Recipe - Uses Artificial Sweetener

I recently got a bread maker and it has been awesome. The downside is I recently started eating better in order to get rid of some of these extra pounds before Christmas. It's kind of hard to lose weight while making bread in the bread maker. I came up with a really good Banana Bread recipe and I wanted to share it with you all. The benefit of this recipe compared to the normal, "sugared" recipe is that this uses an artificial sweetener. That cuts the calories to 1/3 of the normal amount and saves a lot of precious calories.

The hard part about eating low calorie food is that it usually tastes bad. This recipe, on the other hand, does not taste bad at all-it tastes exactly like normal sugared banana bread. Whenever I have made it for friends and family (2 or 3 times so far), they have never known that it was a low carb, low, calorie substitute of a real version of Banana Bread.

Anyway, onto the recipe. Make sure you follow it exactly how I wrote it and I'm sure you'll soon be enjoying the sweet taste with 1/3 the calories!

Are you in a pinch and have to make something for Thanksgiving dinner and you have no clue? Here is a great recipe that you can make and bring or serve that will take no time for you to do. It is specifically for those of you who are truly "last minute" and have backed yourself up against a wall.

When it comes to things to bring to a party or something to place on the table, we all want to make sure its going to be good. Have you ever brought a dish to someone's house and then, purposely placed your dish on the far side of the table just in case nobody likes it? Its our human nature to feel insecure about our cooking especially when its for anyone other than our own family.

Most of us rush around at the very last minute and whip something up and place it in a foil pan and off we go. All the way to the dinner party we asking ourselves if what we made is even edible. We then come up with this master plan to sneak our dish into the house and never stake claim to it until someone says something good about it. As the day goes on, anytime we get up to get something or move around, we sneak a peak over at the table to see how much of what we brought is gone.

C'mon- admit it, we all have done this, but fear not, this year will be different. I have a great easy recipe for you to make and you will have no worries about telling everyone that you made it. The recipe is for some fresh baked crescent rolls, that we are going to doctor up a bit. Basically, you just get some store bought rolls from the store, follow the directions but add a couple of things to the rolls. It will amaze you how gourmet these rolls will become.

Ingredients

4 teaspoons finely chopped fresh parsley
4 teaspoons finely chopped fresh thyme leaves
4 teaspoons finely chopped fresh basil leaves
4 teaspoons finely chopped fresh oregano leaves
2 cans (8 oz each) refrigerated crescent dinner rolls
1 egg
1 teaspoon water
Directions:
Separate dough into 16 triangles.
Sprinkle each with 1 teaspoon herb mixture; press lightly into dough. Roll up each triangle, starting at shortest side and rolling to opposite point.
On un-greased cookie sheets, place rolls point sides down; curve each into crescent shape.
In small bowl, beat egg and water until blended. Brush egg mixture over tops of rolls.
Place 1 herb leaf on top of each roll; brush egg mixture over top of leaf.
Bake 10 to 12 minutes or until golden brown. Serve warm.

There is nothing like warm fresh herb rolls, you will be the hit of your dinner. The choice is within.

Rice Pudding: Pressure Cooker Recipe

If you love rice pudding, you will be happy to know that you can make it MUCH quicker if you use your pressure cooker!

This recipe is easy and delicious, especially when topped with fresh berries and a drizzle of honey.

My recipe was written for the Elite 8-Qt Electric Pressure Cooker but can be used in any electric pressure cooker 6-Qt or larger.

If you are not a big fan of honey, try using Agave Nectar or omitting it altogether and sticking with your basic granulated sugar. No need to increase the amount of sugar in the recipe, simply use 2 Tablespoons (of the 1/2 cup required) during the rice-cooking process and then follow along as directed.

2 cups white rice, long- or short-grain

5 1/2 cups water

1/2 teaspoon cinnamon

Low Sodium Recipes - Baked Lemon Herb Chicken With Fresh Mushroom Stuffing Recipe

This is a very moist and flavorful baked lemon herb chicken recipe. The mushrooms help keep the stuffing moist and the flavorful green onions (scallions), celery, fresh lemon juice, lemon zest and olive oil, make this recipe very flavorful. No salt is added. A salt free lemon herb seasoning is used, so this would be a more heart healthy, chicken recipe especially good for a low sodium diet. Using fresh lemon is a low sodium tip that helps food taste more salty. If you like chicken and the flavors of fresh lemon and fresh mushrooms, you will enjoy this healthy chicken recipe.

Lemon-Herb Chicken With Fresh Mushroom Stuffing

1 whole chicken 3 to 3 1/2 pounds (broiler-fryer size)

2 Tablespoons olive oil, divided

1/4 cup finely chopped green onion

1/2 cup finely chopped celery

1/2 pound (8 ounces) fresh mushrooms, cleaned and thinly sliced

1 Tablespoon Lemon-Herb seasoning, (preferably a salt-free seasoning), divided

1 teaspoon fresh lemon zest (lemon rind, yellow part only), finely grated

1/4 cup fresh lemon juice, divided

1 cup soft or fresh bread crumbs

Remove giblets and neck from inside chicken. Rinse chicken inside and out with cold water, pat dry with paper towels and set aside. In large non-stick skillet, heat 1 Tablespoon of the olive oil over medium low heat. Add green onion and celery and gently cook until softened, then add mushrooms, and cook until tender. Stir in 2 teaspoons of salt free lemon herb seasoning, lemon zest, 2 Tablespoons of the lemon juice (1/2 of it), and the bread crumbs. Stir well to combine but don't make a mush. Turn off the heat and let stuffing cool a bit.

Place chicken on a rack in a roasting pan. Stuff with the mushroom stuffing. Don't pack it in, just lightly spoon it into the bird. Truss the chicken, (this will make a nicer presentation), but not absolutely necessary. In a small bowl, combine the remaining olive oil, lemon juice, and lemon-herb seasoning. Brush this mixture all over the chicken. Bake at 350 F for 1 1/2 to 2 hours or until done. Serves 4 - 6.

Note: You can double the stuffing recipe and bake half of it or all of it in a dish, covered with foil or a lid along side the chicken for about 45 minutes, remove the cover and bake another 15 minutes or until lightly browned on top.

Pan drippings for a sauce: Skim off the excess fat. Add some water (up to a cup) or dry white wine or even add more fresh lemon juice with some water to the pan and bring the drippings to a simmer with a little more lemon-herb seasoning and perhaps some freshly ground white or black pepper. Scrape up the fond (browned bits at the bottom of the pan) and let the liquid reduce to intensify the flavors. Serve on the side.

Serving suggestions: Slice the chicken and serve with some of the stuffing and some of the sauce. Serve with rice, or pasta like orzo, with minced fresh parsley, sprinkled over all. A fresh green salad would also go well with this chicken recipe. Fresh lemon wedges, (optional), served on the side.

Toaster Oven Recipe For Banana Mini Meat Loaves

Lots of people are trying to "hide" fruits and vegetables in everyday foods so that they can up their nutrition intake without feeling like they are eating overly healthy food. Here is a great way to get a little more fruit into your life. Next time you make meatloaf, skip the eggs and milk and use a banana instead. Bananas are a nutrient dense food, loaded with vitamins B6 and C, potassium, manganese and fiber. They are cholesterol free and fat-free, unlike the milk and eggs they replace. Banana meatloaf is exceptionally moist and doesn't fall apart easily.

A few months ago I had an intense craving for meatloaf. I had the ground beef, but no egg. I knew if I just skipped the egg, the meat loaf would likely be dry and crumbly. I looked around my kitchen for a suitable replacement. I spotted a banana on the kitchen table and my mind wandered back to the days when I first learned to make ice cream. Most really good ice creams are actually frozen custards with an egg and cream base. The eggs give the ice cream a smooth texture. Banana ice cream, however, does not need eggs to achieve that very same texture. The bananas take the place of the eggs in ice cream, so could it work in meatloaf? An hour later I had my answer. Yes! The results were better than anything I could have imagined. The banana flavor is present but welcome, and not strange at all. The meatloaf was incredibly moist and held together well without being tough at all. It was a perfect meatloaf, and I have not made meatloaf without a banana since.

You can use a banana in place of the egg and milk in your favorite meatloaf recipe, if you'd like. The ratio is one banana per pound of meat. Here is a recipe for a simple meatloaf that comes together quickly and easily. I usually form it into four mini loaves, because it bakes quicker that way. You could, however, use this same recipe for one large banana meatloaf, just add 15 minutes to the baking time.

Ingredients For Four Mini Banana Meat loaves

1 ripe yet still firm banana

1 piece of whole wheat bread

1 teaspoon of sea salt

1 teaspoon of dry mustard

1 teaspoon of Hungarian hot paprika

1 teaspoon of granulated dried garlic

1 tablespoon of dried onion

1/2 teaspoon of freshly ground black pepper

1 pound of grass-fed ground beef

1/4 cup of ketchup

2 tablespoons of Worcestershire sauce

1 teaspoon of hot sauce

Directions

Heat your toaster oven to 350 degrees F.

Put the banana, sea salt, dry mustard, Hungarian hot paprika, dried garlic, dried onion and freshly ground black pepper into a large mixing bowl. Use a potato masher to mash everything till smooth.

Put the slice of whole wheat bread into the work bowl of your food processor and process til it is fine breadcrumbs. Add to the banana mixture and stir well. Add the grass-fed ground beef and gently mix everything; try to avoid overworking the mixture once the beef is added.

Combine the ketchup, Worcestershire sauce and hot sauce. Mix well. Set aside.

Form the meat mixture into four even mini loaves and place into a greased baking dish that will fit into your toaster oven. Bake for 30 minutes, then evenly distribute the sauce over the top of the mini loaves. Bake for an additional 15 minutes.
