What Is Beef Stroganoff?

During 1912, a new recipe emerges and this one has onions, tomato paste and it is served with potato straws. The use of beef strips instead of chunks was imposed by Larousse Gastronomique in 1938. And it finally reached the new world in 1950.

During the Second World War, beef stroganoff has already reached China and it has been served in many exclusive hotels and restaurants. That is also the time when the Chinese created their version of the dish in which they do not add sour cream but they top it on rice. In United Kingdom, they use a white wine based creamy sauce to compliment the beef flavor rather than the original sour cream.

In Brazil, they have a version with tomato sauce, onions and mushrooms and the white sauce is a heavy cream based. In Iran, beef stroganoff is made with beef strips sautéed with onions and mushrooms and mixed with cream. To cook the original recipe, all you need to do is to sauté the onions and mushrooms in butter until the onions are soft. Add the beef and sauté for 5 minutes. Add the sour cream and simmer under low heat for 10 minutes. And that is it, your authentic beef stroganoff recipe.

Today, we enjoy beef stroganoff anywhere and there are hundreds of ways of cooking it. From the humble Russian kitchens to the most posh restaurants, beef stroganoff has made it worldwide. Alligator Pasta With the Goodness of Avocado

Normally I make guacamole, a spicy dip, with avocados. Or I half the fruit and just squeeze a bit of lemon juice over the flesh. Scooped out with a spoon this is an instantly gratifying treat. However, recently I found great avocados in the market and bought two kilograms. With this abundance I wanted to try something different.

On the internet I found many recipes for avocados, most of them originating in the United States of America. In California, avocado pie seems to be very popular. I even discovered a recipe for avocado-chocolate truffles. One day I will try my hand on this one.

First of all, I wanted to combine avocado with pasta. Inspired by my extensive internet-research I came up with the following recipe which I call 'alligator pasta'. I decided to mingle the avocado with feta, roasted garlic, cherry tomatoes, fresh thyme and yellow bell pepper.

"Nice, salad for dinner", was my husband's reaction when he saw me preparing this dish. He took it well that the salad turned out to be condiment for pasta. "It works astonishingly well with the feta, but I could do without the cherry tomatoes and the bell pepper", was his response. I agree with him, but I also appreciate the extra vitamins, minerals and fibre from the added vegetables.

Alligator Pasta

Ingredients (for 4 servings):

1 big, ripe avocado1 packet (200 grams) feta1 packet (500 grams) Italian pasta75 grams butter200 grams cherry tomatoes1 yellow bell pepperany fresh herb you like6 big cloves garlicsaltpepper

Method:

Put a big pot with water on the fire to cook the pasta. Always salt the pasta water shortly before boiling. If you add the salt in the beginning, the water takes longer time to cook.

While the water is heating up, wash the cherry tomatoes and the bell pepper. Halve the tomatoes and cut the bell pepper into cubes. Wash and cut your herbs and place them together with the vegetables into a bowl. Salt and pepper the vegetables slightly and combine them well. Grate the feta cheese and keep aside.

Clean the garlic cloves and crush them. Melt the butter in a small pan and fry the crushed garlic until slightly brown. Be careful not to burn it.

When the water boils, add the pasta and cook according to the instructions on the packet. Drain the pasta, return it to the pot and mix it with the garlic butter. Add the grated feta cheese. Turn on the heat until the cheese melts. Keep a bit of feta aside for sprinkling over the top of the pasta.

Pour the pasta into the bowl with the vegetables and carefully blend it with the avocado-mix. You don't want to end up with a mush. Sprinkle the rest of the feta over the pasta and serve immediately.

Avocado - the healthy kind of fat

The name avocado has its origin in the Aztec word ahuacatl. The avocado tree has been cultivated in Central and South America since 8.000 BCE. During the 18th and 19th century, the avocado spread first to Jamaica and from there throughout the Asian tropical regions. The cultivation of avocado as a crop started in Florida and California at the beginning of the 20th century.

Although avocados have a lot of fat, they belong to the healthiest fruits of our planet. They should not miss in any healthy diet.

Avocados contain oleic acid, a monounsaturated fat that helps reduce 'bad' cholesterol levels and lowers the risk of breast cancer. In addition, it offers a lot of lutein, a carotenoid which enables the body to absorb nutrition from other food sources. If you add some slices of avocados to your salad, your body can make greater use of the nutrients in the salad.

The large amount of vitamin E in avocados boosts the immune system, keeps the skin healthy and prevents heart disease. The list of nutrients in avocados includes magnesium, vitamin C and vitamin B 6, folate, iron and potassium, a mineral that helps regulate blood pressure.

Simple Barbecue Chicken Recipe For a Sunday Night Cookout

Sunday, the day of rest. Well that's what I was taught at school (and in church) when I was a kid. Whilst it's important to a lot of us, it's not the day of rest in all religions so let's not dwell on this point other than to say that it is a special day.

We all work long and hard during the week and it's the weekend when most of us are lucky enough to take a break, spend time with the family and indulge in our passions and interests. For me, one of those passions is cooking and even though I do write recipes as part of my day job, cooking is still an important part of our weekend family ritual. There's nothing better than everyone sitting down to a meal together, we can discuss the weeks event's, what's coming up next week and most importantly, enjoy being there in the present with each others company.

Trying to do something special and different all the time can become a strain so sometimes simple is best. Think about the secret of good Italian food; fresh basic ingredients, full of flavor and simply cooked. So why shouldn't we do the same?

I love chicken on a Sunday, and when the family is around the table, it's got to be a whole chicken carved right there. For some reason, chicken pieces just don't have that same effect do they? So how do you barbecue a whole chicken simply?

I have three steps for a . The first thing is to let the chicken do the talking, get one that's got some texture and flavor. Free range, corn-fed and organic if you can stretch to it. A free range chicken has so much more flavor and texture because while alive it's had the opportunity to move around and exercise its muscles and this really does make for a different meat.

Secondly, spatchcock it. This just means cutting down the backbone and opening the chicken out so that it is flat. Technically you should remove the keel bone ( commonly and mistakenly referred to as the breast bone) but it's not essential. Barbecue grilling your chicken flat like this means that it cooks in a shorter period of time (usually about 50 minutes) and it's an easy grill, just turn over at the halfway stage - now what could be more simple than that? In addition when you spatchcock the chicken the backbone is cut out, this is where the any bugs from the intestinal tract might still linger so preparing your chicken in this manner reduces the health risks too.

All you need to do to spatchcock your chicken is to sit it on a board on its neck and cut down either side of the backbone with a sharp knife. Flatten it and if you want to cut either side of the keel bone and "pop" it out.

The final thing for a simple grilled barbecue chicken recipe is the seasoning. Rub on a little olive oil and then season on both sides with salt and pepper. Not only is the most simple seasoning sometimes the best, the salt will draw the moisture out of the fat and give you that tasty crispy skin.

How to carve? When your chicken is cooked, just slap it down on the carving board and quarter it. Now you can't get much more simple than that!

Self-rising flour/All-purpose flour 150g
Baking powder 1/4 teaspoon
Butter 120g
Castor sugar/Regular sugar 90g
Eggs 1
Vanilla essence 3 drops
Cornflakes 1 cup
Cookie cutters Any shape you want

You need the following ingredients to make a simple frosting:

Fresh cream 4 tablespoons
Butter 2 tablespoons
Castor sugar 1 cup
Food coloring (optional)
Sprinkles (optional)

How to make Melt-in-Your-Mouth Cookies

1. In a pan, melt 120g of butter.
2. Turn off the heat and then add 90g of castor sugar. If you are using regular sugar, blend it into a fine powder using a coffee grinder before adding.
3. Beat well until sugar dissolves into butter to form a creamy mixture.
4. Now add the egg to the mixture and mix gently. Unlike a cake, you don't need to separate the egg white and egg yolk. Simply add the whole egg.
5. Add a few drops of vanilla essence to give a wonderful aroma to your cookies.
6. Now add self-rising flour. In case you are using all-purpose flour, first add 1/4 teaspoon of baking powder to it.
7. Mix the flour well into your mixture. Use your hands to knead the dough into a ball. The dough should neither be too soft nor too firm. The cookies will only be soft, flaky, and moist if the dough is of the right consistency.
8. Lightly sprinkle a surface with flour. Now take some of your dough mixture and roll it out until it remains 1/2cm thick.
9. Use cookie cutters in any shape you like. Round cutters work best as they hold their shape well. Kids will love helping you cut the cookies into various shapes.
10. Reuse the strips of dough left after cutting out the cookies.
11. Using your hands, slightly crush the cornflakes and spread on a tray. Coat your cookies with the cornflakes. Be gentle, otherwise the cookies may lose their shape.
12. Arrange the cookies on a baking tray.
13. Preheat the oven to 425 F.
14. Bake the cookies for ten minutes or until golden brown. Check every two minutes to avoid getting the cookies burnt.
15. When taken out of the oven, the cookies will be very soft. Let them sit aside to cool down. As the cookies cool, they will get the soft, flaky crunch.
16. Store the cookies in an air-tight jar after they are cooled to room temperature.

20 Time-Saving Ideas for Healthy Kid's Snacks

The last thing I can think about on a busy weekday morning is what I'm going to put in the kid's lunch boxes. I'm tired of throwing away uninspired food that returns home squashed and uneaten at the bottom of lunch pails. I also wanted to stop relying on the old standard of store-bought processed fruit and nut bars and fruit cups full of questionable ingredients.

So, one rainy Sunday I brainstormed a list of healthy, alternatives and stuck it on my fridge. This visual reminder is worth its weight in gold! I'm forever adding to the list when I come across delicious recipes and health boosting ingredients such as maca powder, spirulina, whey concentrate, raw cacao, coconut sugar or agave. Here are my top 20 healthy snacks just for you.

1. Fill a stick of celery with cream cheese or sunflower seed butter for a boost of protein and a slightly nutty sweet taste.

2. Add banana, a tablespoon of honey, blueberries and a dash of cinnamon to cup of fresh ricotta. Stir it around for fabulous feast.

3. Chop up your favourite fruit for a fruit salad. Drizzle the ingredients with fresh lemon juice to stop the browning of the fruit.

4. Nashi fruit is a Japanese cross between an apple and pear. Find it in Asian grocers. Cut into quarters, these nibbles are super crunchy and sweet.

5. Brush olive oil over nori (seaweed) sheets and sprinkle a small handful of poppy seeds onto the coating. (I often sprinkle them with a tiny amount of Himalayan pink salt or celtic salt for extra flavour). Toast the nori pieces in a hot oven for 15 minutes or until they are crisp. Cut into small pieces for an on-the-go snack.

6. Make rainbow savoury skewers by threading bocconcini cheese balls, cherry tomatoes, slices of cucumber and capsicum on sticks.

7. Choc-Goji Berry Balls are a yummy family favourite. Just process 100 gram of goji berries, cup raw cacao powder, cup of dates, cup coconut and cups sultanas with a tablespoon of agave syrup. Use clean hands to roll these into the size of large marbles. Refrigerate for 30 minutes then serve.

8. Apricot coconut 'snow' balls are good too. Process 200 grams dried apricots, 1 tablespoon of flaxseed meal, cup sultanas, 2 tablespoons of sesame seeds and cup tahini (sesame seed paste, available in Turkish grocers). Shape this mixture into small balls and roll in dessicated coconut, hence the name 'snow balls'.

9. Roast lengths of zucchini by brushing them with a slight coating of olive oil and a sprinkling of sesame seeds and salt and baking them in a hot oven for 20 minutes. Serve with dipping hummus (made from chickpeas and tahini) or sweet chilli sauce.

10. Top rice crackers with tomato, cucumber and a slice of swiz cheese. To prevent sogginess, put the ingredients into the lunchbox in separate containers or zip lock bags and invite the children to assemble the stack. Mix up plain tuna with either Japanese mayonnaise or cream cheese in a small container. Children can scoop this onto plain water crackers for a nibble snack.

11. Home made pizza quarter snacks can be pre-prepared the night before. Some say that day-old cold pizza tastes even better.

12. A bag of roasted chickpeas can be divided up into portions and sent on their way. It's a crunchy treat. One store-bought treat I do like is roasted broad beans. I keep a 25 gram pack in my bag at all times for a protein hit emergency. Find chickpeas and broad beans in the health food or Asian sections of your supermarket.

13. Strips of cucumber, celery, bell peppers, carrot and zucchini can be dipped into a dip made from cream cheese, chives and dill. Another favourite dip is mint 'raita' (an Indian dipping sauce). Simply mix two cups of plain green yogurt with 1 teaspoon of dried mint, a quarter of a cucumber finely chopped and one tablespoon of honey. This makes four cups.

14. Make a berry bundle. Mix blueberries, slices of strawberry, red grapes green grapes and currants in a container for a rainbow delight.

15. Offer green 'roll ups' of asparagus stalks with a slice of fresh ham or swiz cheese covering. Wrap in foil.

16. Boil up your own fruit puree. Try apple and mango, or peach, mango and banana. Store in baby Tupperware cups with air-tight seals and refrigerate.

17. A cup of plain slightly salted popcorn is a real treat for pre-schoolers. It takes less than five minutes in the morning to pop fresh and they love it!

18. Strangely, cold toast with butter, honey and a few slices of banana is a much-loved treat snack around here.

19. Fill a big airtight container of your own dried fruit snack by chopping up dried apples, apricots, dehydrated bananas, sultanas, cashews, almonds, pecans and sunflower seeds. Scoop out a cup for an on-the-go protein hit.

20. Eat wedges. No, not the potato kind! A wedge of watermelon, honeydew, cantaloupe (rockmelon), Brie cheese or apple is the quickest time-saving snack of all.

Be sure that children's lunch bags are packed with freezer packs in insulated carriers or can be stored in the refrigerator to prevent food from spoiling.

A Different Spin On Pumpkin Pie

My maternal grandma made the best pumpkin pie this side of heaven. With the perfect amount of sweetness and very subtle spices, her pumpkin pie was the only one I ever really loved. She has been gone for 6 years now but I still miss her and still crave her pumpkin pie, especially around the holidays. It was the one recipe I managed to inherit from her before she died. Once I had a family of my own, I was so excited about making this recipe for them. Only problem is, they do not like pumpkin, much less pumpkin pie. "Oh but this pie is different," I assured them. "It is grandma's special recipe." Still their response once they tasted it was lukewarm at best. The members of my tribe are devout sweet potato pie lovers, and pumpkin pie to them just doesn't cut it. Oh I love sweet potato pie also, but I've just got to get my pumpkin pie fix from time to time.

Then I had what I thought was a brilliant idea. A close second to sweet potato pie among family favorites was cheesecake. So what would happen if I were to combine the two recipes to make a pumpkin cheesecake? Okay, so I admit, I am a little slow and did not know that there was already such a thing as pumpkin cheesecake at that time. In fact, I never started seeing recipes for pumpkin cheesecake until shortly after I had made my first one. And what if I made my crust just a little different? Some of our holiday guests were gluten intolerant so I came up with a way to make the crust gluten-free using dark chocolate and pecans. The guests absolutely loved it. My family was a little leery at first and saw it as yet one more of my attempts to cram pumpkin down their throats. I am sure they probably took that first "courtesy bite" just to avoid the "wrath of Mama." Once they tasted it however, they were hooked. My husband declared that it was almost as good as.... well never mind. It was that good and he ended up eating 3 slices and would have eaten more had I not reminded him that this pie was neither low-fat nor low-calorie. From that day on my pumpkin cheesecake has become a regular fall tradition in our house even before the holiday season officially begins. This year my husband even requested it for his birthday which falls in October. He says that it is a recipe even pumpkin haters can love.

Ingredients
Filling:
1 16 ounce can of pumpkin puree or one cooked pie pumpkin puree
2 8 ounce blocks of cream cheese softened
1 cup of sugar
3 large eggs
1 teaspoon of vanilla extract
1 1/2 teaspoons of ground cinnamon

Delicious Old Fashion Bread Recipes

These are perfect to enjoy or give as gifts. Old fashion Gingerbread to Pineapple Carrot Bread you and your friends and family will love them! While some people think of gingerbread only at the holidays, it is a good healthy bread and we enjoy it year round. The Pineapple Carrot Bread is a delicious sweet bread and is perfect for brunches, gifting, and holiday breads from Easter to Christmas.

GINGERBREAD

2 1/4 cups unsifted all-purpose flour

3/4 cup sugar

1 tsp soda

1/2 tsp baking powder

2 tsp ginger

1 tsp cinnamon

1/4 tsp ground cloves

14 tsp salt

3/4 cup soft margarine

3/4 cup water

1/2 cup dark molasses

Place the flour, sugar, soda, baking powder, spices and salt in a mixing bowl; mix together well. Add the margarine, water, and molasses. Mix at low speed of an electric mixer until well blended, about a minute. Pour the batter into a lightly greased 10-inch cast iron skillet or a 9-inch square baking pan. Bake at 350 degrees for 30 to 40 minutes or until the gingerbread springs bakc when lightly touched in the center.

Best served warm.

Yield: 12 servings

PINEAPPLE CARROT BREAD

2 1/4 cups all-purpose flour

1 pkg active dry yeast

1 can (8-oz) crushed pineapple in its own juice

1/4 cup granulated sugar

1/4 cup butter

1/2 tsp salt

1 egg

1 tsp vanilla extract

1/2 cup shredded carrot

Lightly greased an 8-inch loaf pan and set aside.

In a large mixing bowl stir together the 1/4 cup of the flour and the yeast; set aside.

Drain the pineapple and reserve 1/3 cup of juice. In a saucepan, heat and stir reserved pineapple juice, sugar, butter, and salt just until warm (120-130 degrees) and butter is almost melted. Add to the flour and yeast mixture. Add the egg and vanilla extract. Using an electric mixer on low speed, beat the mixture for less than a minute, scraping down sides of bowl. Increase speed to high and beat for 3 minutes.

Stir the pineapple and carrot into the mixture. Using a wooden spoon or silicone spatula, stir in the remaining 2 cups of flour. This batter will be sticky. Spoon into the prepared pan. Cover and let rise in a warm place until almost double. This will take about 45 to 60 minutes depending on heat.

Preheat oven to 375 degrees a few minutes before ready to bake.

Bake at 375 degrees for 35 to 40 minutes or until golden brown, covering with a piece of foil the last ten minutes or so if it starts to get too brown.

Remove bread from the pan to a wire rack to cool completely.

Yield: 1 loaf of about 16 slices.

1 tablespoon of chipotle powder

24 oz. can crushed tomatoes
24 oz. can of diced tomatoes
Lime wedges
1 cup of sour cream
1 cup of shredded Cheddar cheese
1/2 cup of sliced scallions

Procedure:
In a large kettle, fry the bacon until light crisp and brown. Then, cook the garlic, onion, bell peppers, chipotle powder, oregano and the chili. Add in some ground pepper and a teaspoon of salt (or your preferred amount). Cook the ingredients until tender for about 5 minutes. Next, put in the beef and blend in with the mixture. Once the beef is brown, add the pork. Stir gently and allow to cook for 4 to 5 minutes. Pour the beer and stir in the beans. Combine the mixture well with the other ingredients. Then, add the tomatoes. Reduce the heat and simmer for 1 hour and 30 minutes. Remove the mixture from heat and place in a serving bowl. You may garnish it with lime wedges and some more pepper, according to your preference.

The lowly and humble potato is one of the few vegetables that have the most versatility of use, in food dishes. But rarely does it get any recognition for its all around usefulness. Potatoes are delicious anyway you cook them, boiled, baked or fried, and can be used in more ways than can be explained here. There are vast amounts of potato recipes available online and everyone seems to have a favorite one of their own, so I would like to share my "Spiced Coconut Potato" recipe with you.

The Spiced Coconut Potato recipe can serve three to four people. It's an Asian dish popular throughout the Philippines. You can use regular potatoes or sweet potatoes, although most potato recipes in the Philippines use sweet potatoes. Either way, you will surely enjoy this tasty dish as much as I do.

Spiced Coconut Potato recipe

Ingredients

• 1lb Potato, peeled and sliced
• 1 Onion, chopped
• 3 crushed, Garlic Cloves
• 1 tsp freshly grated Root Ginger
• 1 tsp Ground Turmeric
• 2 Large Chillies, finely chopped or ground
• Salt and Pepper
• 1 tbsp Soy Sauce
• 8oz. Coconut Milk
• 12oz. Water
• 1 tbsp Lemon Juice

Directions

1. Scrub your potato and then boil it or cook it in the microwave. If you plan on cooking it in the microwave (it only takes five minutes), then prick it several times with a fork to make holes. Put the potato on a plate then cook it at full power for 5 minutes, then take the potato out and let it cool under running water. Peel and slice the potato into small pieces and place to the side until needed.

2. Next place all the ingredient into a large saucepan, do not add the potato yet. Stir occasionally while you bring the content to a boil, and then reduce to a simmer for approximately 5 minutes.

3. Add the sliced potato and mix it well, let it simmer for approximately 20 minutes and then serve it hot. This dish is usually served with white rice, or as a type of soup meal with bread.

Fun Potato Facts Most people don't realize how important potatoes are. It is the number one most important and vital non-cereal crop worldwide, and ranked fourth overall crop in the world. In the United States it is second only to dairy products. Potatoes in the USA are the largest in the world, and the biggest ones can weigh a whopping 18 pounds. One potato that big could make over 70 medium fries at McDonalds. Potatoes are here to stay. They are eco friendly, cheap and very easy to grow even in adverse conditions. This makes them an ideal nutritious crop in developing countries.

For those old enough to remember Live Aid in 1985 there was a harrowing video played to the tune of 'Drive' (..who's gonna take you home tonight?) by The Cars. There were children to weak to walk and emotional scenes of grieving parents burying tiny coffins. At the end there was a lingering shot of a baby girl, flies around her eyes, staring at the camera - apparently hours from death. 20 years later at Live 8 Bob Geldof introduced a beautiful young lady to the crowd....Same person.

I felt the tears rolling down my face. What it meant was someone's contribution had saved her life.

I decided to turn my (now very large) collection of potato recipes into a book and give all the proceeds to Save The Children or any other charity that could help save lives.

By the way don't confuse me with a professional cook. I'm just a bloke who spent a lot of time prating about in the kitchen. There were times when I didn't write a potato recipe down for a few days after I cooked it....... so if you follow the potato recipe to the letter and it doesn't quite work out...don't tell anyone.

How To Make Ghee - A Simple Healthy Recipe

Ghee is regarded as one of the best food sources in the Ayurvedic diet and it is considered beneficial for everyone in moderation.

The yogis and practitioners of Ayurveda consider it to be a very healthy, balancing and harmonizing food because it lubricates all the muscle tissues of the body.

Making ghee gets rid of impurities (fats and milk solids) and water out of the butter so you are left with healthy clarified butter.

Ghee can be used in most recipes for flavoring and cooking. Here is what you need to make your Ghee.

Ingredients & Materials:

1 pound unsalted butter (organic if available), a large pot or sauce pan, a few sheets of cheesecloth, a strainer, a clean container or one pound glass jar with a lid.

1. Melt the butter in a large pot or sauce pan on low to medium until it comes to a boil. You will start to hear a popping sound. Do not stir.

2. Continue to cook the melted butter over low to medium heat. It should continue to pop and bubble and some foam may appear on top. You can skim off and discard the foam if you like but leaving it won't affect the ghee.

3. Remove from heat when the popping sound and bubbling noise quiets down. Sediment at the bottom of the pot will start to turn golden brown. The ghee will turn to a clear golden or amber color. This usually takes about 20 minutes. A darker color means overdone ghee so it's important not to leave the ghee on the heated stove.

4. Leave the heated ghee to cool for 10 to 20 minutes and then line a strainer with some cheese cloth and strain the ghee into clean containers (sterilized jars work great).

Note: Ghee at room temperature looks yellow and has semi-solid texture. Ghee does not need to be refrigerated and if it is properly made and not exposed to contaminates, it will keep for over a year, even outside the fridge - it melts quickly when exposed to heat. Remember to always use a clean spoon to scoop out ghee for use.

How To make flavored Ghee - Infused With Herbs

It is very easy to make flavored ghee using the recipe above and infusing some Ayurvedic herbs or spices such as cloves, cardamom or mint

To infuse the herbs, add them to the butter at the start or at any point in the process that results in them being dissolved into the ghee. I have experimented with adding herbs at different stages and I found the infusion strength to be best when added right after the butter has melted (just beginning to bubble).

I would recommend a quarter teaspoon of herb for each pound of butter. When making clove or cardamom ghee, I use 6 to 8 cloves or cardamom pods to the butter and it tastes great.

This may be more on the sweet side, but everyone will find this something other than the same old turkey. The ones we've tried the previous years were more on the savory side using fresh herbs and vegetables from our garden. Adding this fruit-glazed turkey recipe this year can add a bit of sweetness to our Turkey dish. My eldest daughter has already called it our sweet Thanksgiving dinner.

Fruit-Glazed Turkey

Ingredients
12 pounds turkey1 pack (14 ounces) of unseasoned stuffing cubes1 medium onion, chopped1 medium red apple, chopped1 celery rib, chopped1 cup raisins1 cup turkey or beef broth1 cup butter, melted1 tablespoon poultry seasoning

For the Fruit Glaze

I recently got a bread maker and it has been awesome. The downside is I recently started eating better in order to get rid of some of these extra pounds before Christmas. It's kind of hard to lose weight while making bread in the bread maker. I came up with a really good Banana Bread recipe and I wanted to share it with you all. The benefit of this recipe compared to the normal, "sugared" recipe is that this uses an artificial sweetener. That cuts the calories to 1/3 of the normal amount and saves a lot of precious calories.

The hard part about eating low calorie food is that it usually tastes bad. This recipe, on the other hand, does not taste bad at all-it tastes exactly like normal sugared banana bread. Whenever I have made it for friends and family (2 or 3 times so far), they have never known that it was a low carb, low, calorie substitute of a real version of Banana Bread.

Anyway, onto the recipe. Make sure you follow it exactly how I wrote it and I'm sure you'll soon be enjoying the sweet taste with 1/3 the calories!

BUTTERSCOTCH NUT ROLLS

These rolls are so good. No one will ever guess how easy they were to make!

1 pkg frozen round roll dough
1 box (4-serving size) butterscotch cook and serve pudding mix
1 cup brown sugar
1 tsp ground cinnamon
1 stick butter, melted
coarsely chopped pecans

The night before serving for breakfast: Drop the frozen rolls around the bottom of a Bundt pan (not a tube pan). In a small bowl combine the pudding mix, cinnamon, and brown sugar; sprinkle over the rolls. Pour the melted butter over the rolls and the pudding mixture. Sprinkle with amount of chopped pecans you prefer. Cover the pan with foil and a moist towel. Let set overnight.

Next morning: Bake the rolls at 300 degrees for 20-25 minutes.

BANANA BUTTERSCOTCH BREAD

1 3/4 cups flour
2 tbsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/2 tsp cinnamon
1/2 tsp nutmeg
1 cup mashed ripe bananas
3/4 cup granulated sugar
2 eggs
1/2 cup melted butter
1/4 cup milk
6-oz butterscotch chips
1 cup chopped pecans

Preheat oven to 325 degrees.

Grease and flour a 9-inch loaf pan; set aside.

In a large bowl combine the flour, baking powder, baking soda, salt, cinnamon, and nutmeg; set aside.

In a smaller bowl combine the bananas, sugar, eggs, and melted butter until well combined. Add the banana mixture to the flour mixture alternately with the milk, beating well. Stir in the butterscotch chips and the 2/3 cup of the chopped pecans.

Spoon the batter into the prepared loaf pan. Sprinkle with the remaining chopped pecans. Bake at 325 degrees for 1 hour and 20 minutes.

Cool in pan on a wire rack for 3 minutes. Remove from pan and cool completely on the wire rack.

Minced green onions, 1/2 cup
Soy sauce, 1/4 cup
Minced garlic, 4 tablespoons
Honey, 2 tablespoons
Sesame oil, 1/2 teaspoon
Toasted sesame seeds, 1 tablespoon
Ground white pepper, 1/2 teaspoon
Ground black pepper, 1/2 teaspoon
Boneless leg of lamb, 5 pounds

Procedure:
Mix in a resealable bag the seasonings such as sesame oil, pepper, hoisin sauce, honey, sesame seeds, green onions, garlic and vinegar. Shake the bag to combine the ingredients well. Then, place the lamb meat inside the plastic bag. Gently roll the meat to coat it with the seasonings. Afterwards, seal the bag and place it inside the refrigerator. Allow the marinade to seep in the meat for 8 hours or more.

Then, preheat the grill and put it on high heat setting. Next, put some oil on the grate of the grill. You may use cooking spray for this. Place the meat over the grill. Cook the lamb on all sides for 15 minutes or more. You can baste the meat occasionally, as you turn the meat. Once the meat is tender and brown, place it on a platter. Wait for about 20 minutes before slicing the lamb meat. Then, serve the meat with your choice of dip if you wish.

Yummy Old Fashion Recipes For the Holidays and More - Pumpkin Pudding, Christmas Pickles, Wassail

While some of these recipes are certainly considered 'holiday recipes,' there is no reason you can't enjoy them year-round. For instance, pumpkin is a very healthy food yet it is often set aside for just Thanksgiving and Christmas. This Pumpkin Chiffon Pudding with Coconut should be enjoyed as a healthy dessert year-round. The pickles are just as good at your Fourth of July picnic as they are at Christmas. The Pineapple Wassail should be enjoyed more than once or twice a year.

PUMPKIN CHIFFON PUDDING WITH COCONUT
This is a little different way to enjoy that healthy pumpkin. Now that I am diabetic I have updated my use of this recipe by replacing the sugar with Splenda granulated. No need to hunt for unsweetened coconut since you use fresh grated! But here is the original recipe for those of you who can still enjoy sugar.

1 cup sugar
2 tbsp butter
2 large eggs, separated
2 tbsp flour
3 cups cooked, mashed pumpkin
1 tsp vanilla
1/2 cup grated fresh coconut

In a large bowl cream the sugar, butter, an egg yolks. Add the flour, pumpkin, vanilla and mix together well. Beat the egg whites until stiff and gently fold into the pumpkin mixture. Pour into a lightly greased 9-inch square baking dish or pan. Sprinkle the coconut over the top. Bake at 350 degrees for 30 minutes.

Serves 6

CHRISTMAS PICKLES
1-gallon of dill pickles
2-oz Tabasco sauce
3 garlic cloves. chopped
5 lb granulated sugar

Drain pickle juice and discard.

Slice the pickles lengthwise and place back in the jar. Add the Tabasco sauce and the garlic. Add approximately 1 1/2 pounds of the sugar. Screw lid tightly back on the jar. Gently tip the jar back and forth several times to allow the sugar, garlic, and Tabasco to blend. Leave sitting out a room temperature for a week. As the sugar dissolves, add more until all the sugar has been used. Tip jar each time you add sugar so it can mix in. By the time all the sugar has dissolved, the pickles will be bright green and crisp.

PINEAPPLE FLAVORED WASSAIL
6 cups apple cider or apple juice
1 cinnamon stick
1/4 tsp nutmeg
1/4 cup honey
3 tbsp lemon juice
1 tsp grated lemon peel
1 (18-oz) can unsweetened pineapple juice
1 small can frozen orange juice, diluted according to container directions
1 orange sliced into thin rings

In a large saucepan heat the cider and cinnamon stick to boiling. Cover, reduce the heat and simmer for 5 minutes.

After 5 minutes are up, remove the lid and add the nutmeg, honey, lemon juice and peel, pineapple juice, and the orange juice. Simmer another 5 minutes.

To serve, arrange the orange slices on the top and serve in a heat-proof punch bowl.

Yield: 16 servings of 1/2 cup or 8 servings of 1 cup.

Note: A crockpot or slow cooker is a great way to keep the Wassail warm, if desired. Just pour the hot wassail into the cooker and set on the Keep Warm setting. This also makes a good chilled beverage during the warmer weather.
